Jiggs dinner
The Sunday boiled dinner: salt beef and root vegetables in one pot, with pease pudding boiled in a bag alongside.
Feeds six · Most of a morning, and an overnight soak before it
What you need
- 2 lb salt beef
- 1 green cabbage
- 1 turnip
- 6 carrots
- 6 large potatoes
- 2 c yellow split peas
- 3 tbsp butter
- cracked black pepper
- 1 1/2 c flour (for the duff)
- 3/4 c water
- 1 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
How it's done
- 1. The night before, soak the salt beef in cold water in the fridge, and soak the split peas in a separate bowl.
- 2. In the morning, drain and rinse the beef. Tie the drained peas loosely in a cotton pudding bag — loose, because they swell.
- 3. Put the beef and the pea bag in a large stock pot, cover well with water, and simmer about two hours.
- 4. Cut the cabbage in wedges, peel the carrots, and cut the turnip in thick wedges. Add them to the pot and boil about thirty minutes.
- 5. Add the potatoes and boil until everything is tender.
- 6. Lift out the pea bag, turn the peas into a bowl, and mash them with the butter and pepper.
- 7. Serve the beef and vegetables from the pot with a spoon of pease pudding on each plate.
Where to get a feed
A hall supper, a church dinner or a garden party — the Sunday dinner on the shore. Most places that serve it do it one day a week; ask which.
