Trivia

The Board

Them days you sent a youngster up the road to say there was a game on. Now you send the code, and if a chair's still empty when you deal, one of the regulars takes it.

Down the road

Well, Sunday after Mass we'd walk it. Start at the gate and go down, and every house along here I'll tell you who's in it.

On the go

Them days the garden party was the whole summer. Here's what's on the go now, and when.

The kitchen

Well, Sunday the pot was on before Mass and the smell of it met you at the gate. Here's what was in it, and how it's done.

Fish and brewis

Salt cod and soaked hard bread cooked together and topped with scrunchions.

Feeds four · Twenty minutes in the pan, after an overnight soak

What you need

  • 1 lb boneless salt cod, soaked overnight
  • 6 cakes of hard bread, soaked overnight
  • 3 large potatoes, peeled and sliced
  • 3 small onions, sliced
  • 1 cup salt pork fat, diced
  • 1 lemon
  • fresh parsley
  • salt and cracked black pepper

How it's done

  1. 1. The night before, soak the salt cod in cold water, and soak the hard bread in its own bowl of water.
  2. 2. Simmer the sliced potatoes five minutes, then add the drained hard bread and let them warm through together.
  3. 3. In a separate pot, cover the drained salt cod with fresh water, bring to a boil, then simmer about fifteen minutes.
  4. 4. Render the diced salt pork slowly in a skillet until the scrunchions are crisp and golden. Pour off most of the fat and keep it.
  5. 5. Fry the sliced onions with the scrunchions until deep gold.
  6. 6. Drain the potato, hard bread and fish, and stir them into the pan.
  7. 7. Turn it all out, pour the kept fat over it, and finish with parsley and a squeeze of lemon.

Where to get a feed

A cooked traditional breakfast; several kitchens in St. John's serve it, and it is a Saturday morning dish on the shore.

Where that comes from

The hall

Them days the hall had a dance Saturday and the kitchen had music the rest of the week. It's still playing. Come in and listen.

The yarns

He said, you know the one about the light on the water. I said, I do. That's a story, mind, and I'll tell you which parts.

Not the house

No, I said, that's not the house. It was down just below there. Go back up the road.
