Trivia

The Board

Them days you sent a youngster up the road to say there was a game on. Now you send the code, and if a chair's still empty when you deal, one of the regulars takes it.

Down the road

Well, Sunday after Mass we'd walk it. Start at the gate and go down, and every house along here I'll tell you who's in it.

On the go

Them days the garden party was the whole summer. Here's what's on the go now, and when.

The kitchen

Well, Sunday the pot was on before Mass and the smell of it met you at the gate. Here's what was in it, and how it's done.

Molasses baked beans

White beans baked slowly with molasses, salt pork or bacon and onion.

Feeds sixteen · Five hours, after an overnight soak

What you need

  • 1 1/2 lb dry white or navy beans
  • 1 lb smoked bacon, cut small
  • 2 large red onions, chopped
  • 4 cloves garlic, minced
  • 3 cups water
  • 1 cup fancy molasses
  • 1/2 cup Worcestershire sauce
  • 4 tbsp dijon mustard
  • one 28 oz can crushed tomatoes
  • one 28 oz can tomato sauce
  • 4 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tbsp dried thyme
  • 1 tsp salt
  • 1 tsp black pepper

How it's done

  1. 1. Soak the beans in water overnight.
  2. 2. Fry the bacon slowly until the fat is rendered out and the bacon is crisp. Set the bacon aside and pour off most of the fat.
  3. 3. Cook the onions and garlic in the pan until soft, then add the water and let it boil to lift the pan.
  4. 4. Put it all in a large covered roaster with the drained beans, the bacon, the molasses, Worcestershire, mustard, tomatoes and seasoning.
  5. 5. Stir well, cover, and bake at 325°F for four to five hours, stirring now and then.
  6. 6. Add a little boiling water along the way if it goes dry.

Where to get a feed

A Saturday-night supper dish, and on the table at a breakfast served in a hall.

Where that comes from

The hall

Them days the hall had a dance Saturday and the kitchen had music the rest of the week. It's still playing. Come in and listen.

The yarns

He said, you know the one about the light on the water. I said, I do. That's a story, mind, and I'll tell you which parts.

Not the house

No, I said, that's not the house. It was down just below there. Go back up the road.
